4th of July: Coach Larry's Shoyu Chicken, Spareribs



Every 4th of July, our parents and keiki of H1 Thunder  asker all like to cook food and eat, early morning to evening. The fireworks show is dazzling, but the grilling and cooking skills of Coach Larry are always a treat for us.

The morning began with getting our spot. Coach Larry was there by 4:30 p.m. while I finished up shopping. Safeway had some outrageously discounted chicken and spare ribs, both 50% off. But we began with Portuguese sausage, eggs, scalloped potatoes with onions, and I loaded up on condiments, including my beloved Huy Fong Sriracha chili sauce.





Soon after, Coach Larry got his Shoyu Chicken on the grill. He enjoyed the new grill, which was only $60 at Home Depot. I picked that up along with two massive bags of charcoal for only $14. I later saw a similar grill at Walmart for nearly double the price ($110) and a charcoal bag half the size of ours for $15. A bigger grill meant faster cooking time for his Shoyu Chicken, which had a lot of sugar to create more carmelization and char. Nice.



Then came the steaks, basic with garlic salt and pepper. Then it was the rack of spare ribs. Coach Larry cut them into quarter chunks and cooked them in aluminum foil. When they were brown and beautiful, I coated them with basic BBQ sauce and we let the ribs and juices and sauce mesh together. It turned out awesomely. Tender, slightly crispy, and fun to make.
